Not a recipe as such, but a reminder that tradition is just peer pressure from dead people and that often time is the only reason we don't treat ourselves.

Instant gravy
Oven Ready Roasts
pre-made Yorkshire pudding (or if you're fancy, the big flat burrito Yorkshire pudding)
Pre-cooked roast meat(s) of choice - deli/sandwich meats fine.
Other frozen veg of choice.

Roasts and burrito Yorkshire on for half an hour or so- it's fire and forget, so you can do this when you get coffee if you WFH.

Start lunch break, boil kettle and put traditional yorkies on if you're having those (pre-heat oven before lunch break though- air fryer is quicker). Microwave the veg.

Should be about 5 mins.

Plate up, give yourself a mug of gravy for dunking. Mustard, horseradish, mint sauce whatever on the side too. Dunk and eat. Use yorkies as a bowl...just whatever you want.

It's not as good as a Proper Roast, but it more than makes up for it by taking so little effort.
